Ingredients:
1 lb ground beef (or turkey)
1 cup uncooked white rice
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes, undrained
2 cups diced bell peppers (any color you prefer)
1 cup shredded cheddar cheese
1 small onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, cook the ground beef (or turkey) over medium heat until browned. Drain any excess fat.
3. Add diced onions and minced garlic to the skillet with the ground beef, and cook until onions are translucent.
4. Stir in the uncooked rice, tomato sauce, diced tomatoes (with their juices), diced bell peppers, dried oregano, dried basil, salt, and pepper. Mix well.
5. Transfer the mixture to a 9×13 inch baking dish and spread it out evenly.
6. Cover the baking dish with foil and bake in the preheated oven for 40-45 minutes, or until the rice is cooked through.
7. Remove the foil, sprinkle the shredded cheddar cheese over the top of the casserole, and return it to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
8. Serve hot and enjoy your easy stuffed pepper casserole!
