Ingredients:
- – 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- – 2 cups broccoli florets
- – 2 tablespoons live oil
- – 2 cloves garlic, minced
- – 1/4 cup soy sauce (low sodium recommended)
- – 1/4 cup bourbon
- – 1/4 cup brown sugar (you can adjust this for a lower sugar option)
- – 1 tablespoon apple cider vinegar
- – 1 teaspoon ground ginger
- – 1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)
- – Salt and pepper to taste
- – Cooked rice (optional, for serving)
Instructions:
1. Prepare the Chicken:
– In a large skillet or wok, heat the Olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
2. Cook the Broccoli:
– In the same skillet, add the broccoli florets and a splash of water. Cover and steam for about 3-4 minutes until tender but still crisp. Remove and set aside with the chicken.
3. Make the Sauce:
– In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the soy sauce, bourbon, brown sugar, apple cider vinegar, and ground ginger. Stir to combine and bring to a simmer.
4. Thicken the Sauce:
– Once the sauce is simmering, add the cornstarch mixture to the skillet. Stir continuously until the sauce thickens, which should take about 1-2 minutes.
5. Combine Everything:
– Return the cooked chicken and broccoli to the skillet. Toss everything together until the chicken and broccoli are evenly coated with the sauce. Cook for an additional 2-3 minutes to heat through.
6. Serve:
– Serve the Bourbon Chicken with Broccoli over cooked rice if desired. Enjoy your flavorful meal!
Enjoy!
