Cheesy Ground Beef and Rice Casserole

Here’s a simple recipe for a Cheesy Ground Beef and Rice Casserole:

Ingredients:

  • 1 lb (450g) ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup (200g) uncooked white or brown rice
  • 2 cups (475ml) beef or chicken broth
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 1 cup (240ml) milk
  • 1 ½ cups (150g) shredded cheddar cheese (divided)
  • 1 can (14.5 oz) diced tomatoes (drained)
  • 1 tsp paprika
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Cook Beef Mixture:
  • In a large skillet over medium heat, brown the ground beef until no longer pink.
  • Add the diced onion and minced garlic; sauté until softened (about 2-3 minutes).
  • Drain excess grease if necessary.
  1. Combine Wet Ingredients:
  • In a mixing bowl, whisk together the cream of mushroom soup, milk, and broth.
  • Stir in the paprika, onion powder, garlic powder, and a pinch of salt and pepper.
  1. Assemble Casserole:
  • Spread the uncooked rice evenly on the bottom of a greased 9×13-inch baking dish.
  • Layer the cooked beef mixture over the rice.
  • Pour the soup mixture evenly over the top.
  • Add the drained diced tomatoes.
  1. Add Cheese:
  • Sprinkle half of the shredded cheddar cheese over the casserole.
  1. Bake:
  • Cover the casserole tightly with aluminum foil and bake for 40-45 minutes or until the rice is tender and the liquid is absorbed.
  • Remove the foil, sprinkle the remaining cheese on top, and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.

  • Garnish with fresh parsley if desired and serve warm.
