Easy Bourbon Chicken

Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tbsp olive oil (or vegetable oil)
  • 2 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup bourbon (or apple juice as a substitute)
  • 1/4 cup brown sugar (or honey)
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar (or rice vinegar)
  • 1/2 tsp ginger, grated (or 1/4 tsp ground ginger)
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional, for heat)
  • 1 tbsp cornstarch + 1 tbsp water (optional, for thickening)
  • Green onions or sesame seeds for garnish

Instructions:

  1. Cook the Chicken:
  • Heat oil in a large skillet or wok over medium-high heat.
  • Add chicken pieces and cook until lightly browned (5-6 minutes).

  • In a bowl, whisk together soy sauce, bourbon, brown sugar, ketchup, vinegar, ginger, black pepper, and red pepper flakes.
  • Pour the sauce over the chicken and stir well.
