Garlic Mushroom Chicken Bites with Mashed potatoes

Ingredients

(Serves 4)

For the Chicken Bites:

1.5 lbs boneless skinless chicken breast or thighs, cut into bite-size pieces

2 tablespoons olive oil

Salt and pepper, to taste

½ teaspoon garlic powder

¼ teaspoon paprika (optional)

For the Garlic Mushroom Sauce:

1 tablespoon olive oil

3 cups mushrooms, sliced (button, cremini, or mixed)

4–5 garlic cloves, minced

½ teaspoon dried thyme (or 1 tsp fresh)

½ teaspoon dried parsley (or fresh to garnish)

¼ cup chicken broth (or dry white wine)

Optional: ¼ cup heavy cream for a creamy version

Salt and black pepper, to taste

For the Mashed Potatoes:

2 lbs Yukon Gold or Russet potatoes, peeled and cubed

½ cup whole milk (warm)

¼ cup unsalted butter

Salt, to taste

Optional: ¼ cup sour cream or cream cheese for extra creaminess

Optional: Garlic powder or roasted garlic for flavor

Instructions

Step 1: Cook the Mashed Potatoes

1. Boil potatoes in salted water for 12–15 minutes, or until fork-tender.

2. Drain and return to the pot. Add butter and warm milk.

3. Mash until smooth. Stir in sour cream or cream cheese (optional).

4. Season with salt and garlic powder if desired. Cover and keep warm.

Step 2: Cook the Chicken Bites

1. Heat olive oil in a large skillet over medium-high heat.

2. Season chicken with salt, pepper, garlic powder, and paprika.

3. Add chicken to skillet in a single layer. Cook 5–7 minutes, turning until golden and cooked through.

4. Transfer to a plate and keep warm.

Step 3: Make Garlic Mushroom Sauce

1. In the same skillet, add  olive oil.

2. Saute mushrooms for 5–7 minutes until browned and tender.

3. Add garlic, thyme, and parsley; cook 1 minute until fragrant.

4. Deglaze with chicken broth (or wine), scraping bits from the pan.

5. (Optional) Stir in heavy cream for a richer sauce. Simmer 2–3 minutes.

Step 4: Finish the Dish

1. Return chicken to the skillet and toss with mushrooms and sauce.

2. Let everything warm through, about 1–2 minutes.

Step 5: Serve

Spoon mashed potatoes onto plates.
