Ingredients:
Regarding the Broccoli Bites
florets from one medium head of cauliflower
two big eggs.
1-tsp. spicy sauce (or to taste)
1/100 cup Panko breadcrumbs
a tablespoon of optionally chopped fresh parsley
to season with salt and pepper
Regarding the Buffalo Sauce
To taste, add half a cup of spicy sauce.
melt 1/4 cup of butter.
Regarding the Herby Yogurt Dip
1/4 cup of mayonnaise
one and a half cups of plain Greek yogurt
1/4 tablespoon of fresh parsley, chopped
½ teaspoon of dried dill, ¼ teaspoon of sea salt, ¼ teaspoon of black pepper, and ½ squeeze of fresh lime juice.
Instructions:
Ready your oven for baking at 425°F (220°C). After you have a baking sheet in place, put a wire rack over it. (Or, alternatively, use parchment paper to line a baking sheet in the absence of a rack.)
Whisk together the spicy sauce and eggs in a small bowl.
Combine the breadcrumbs, parsley, and a touch of salt and pepper in a separate small bowl.
Coat each cauliflower slice with the egg and then roll in the breadcrumbs. To beat the egg, use a damp hand, and to crumble the bread, use a dry hand.
On the cookie sheet that has been covered with the baking rack, lay the breaded cauliflower.
To get a golden brown and crispy finish, bake for 15 minutes, then turn and bake for another 10-15 minutes.
Optional: After the cauliflower is cooked, combine it with the buffalo sauce in a bowl. Cook for a further five minutes.
If you’d like, you may serve it with the herb yogurt dip.
Regarding the Buffalo Sauce
Melt the butter and combine it with the spicy sauce.
Regarding the Herby Yogurt Dip
Before using, combine all ingredients and store in the fridge.
