- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 garlic clove, minced
- 1 tablespoon olive oil
- Salt and pepper to taste

Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Filling:
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add chopped spinach and cook until wilted. Remove from heat and let it cool slightly.
- In a bowl, combine the spinach with feta cheese, salt, pepper, and oregano (if using).
- Prepare the Chicken:
- Place each chicken breast between two sheets of plastic wrap. Pound them to an even thickness using a meat mallet or rolling pin.
- Season both sides with salt and pepper.
- Assemble the Rolls:
- Spoon the spinach and feta mixture onto the center of each chicken breast.
- Roll up the chicken tightly, starting from one end, and secure with toothpicks or tie with kitchen twine.
- Cook the Rolls:
- Place the rolls seam-side down in a greased baking dish.
- Optionally, drizzle with a little olive oil and sprinkle with extra seasoning.
- Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C).
- Serve: Let the rolls rest for a few minutes before slicing. Serve warm, drizzled with your choice of sauce or a side salad.
