Spinach and Feta Chicken Rolls

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano (optional)
  • Toothpicks or kitchen twine

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Filling:
  • In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  • Add chopped spinach and cook until wilted. Remove from heat and let it cool slightly.
  • In a bowl, combine the spinach with feta cheese, salt, pepper, and oregano (if using).
  1. Prepare the Chicken:
  • Place each chicken breast between two sheets of plastic wrap. Pound them to an even thickness using a meat mallet or rolling pin.
  • Season both sides with salt and pepper.
  1. Assemble the Rolls:
  • Spoon the spinach and feta mixture onto the center of each chicken breast.
  • Roll up the chicken tightly, starting from one end, and secure with toothpicks or tie with kitchen twine.
  1. Cook the Rolls:
  • Place the rolls seam-side down in a greased baking dish.
  • Optionally, drizzle with a little olive oil and sprinkle with extra seasoning.
  • Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C).
  1. Serve: Let the rolls rest for a few minutes before slicing. Serve warm, drizzled with your choice of sauce or a side salad.
